GLUTEN FREE RASPBERRY CUPCAKES

Steve loves his sweets so I thought I would surprise him with some pretty cupcakes! I found this recipe from a fellow blogger SIMPLY GLUTEN FREE, I changed some of the ingredients, and what can I say....yummy

Batter:
1 1/2 cup gluten free all purpose baking flour
1 tsp xanthun gum( a must)
1/2 cup butter
1/2 tsp vanilla
2 eggs
1 cup sugar
1 tsp baking powder
1/2 cup 7 up or sprite
1 tbsp organic gluten free raspberry flavoring( found at whole foods)
few drops of organic red food color and gluten free(found at whole foods)

mix well don't be freaked out if it looks weird! (I think the seven up does that?). Pour into lined cup cake pan and bake at 350 for about 15 minutes give or take..golden brown..or clean tooth pick

FROSTING:
1/2 cup butter
1/2 tsp vanilla
1/2 tsp lemon juice
beat with mixer till smooth, add 
powder sugar and cocoa, stil with a spatula, I don't have measurements,start with the powder sugar to get the right thickness then work with the cocoa, this is to your liking, if the frosting is too runny add more powder sugar, if not dark enough add more cocoa, if not sweet enough  add more powder sugar, sorry when I made this up it was a little of this and a little of that, when I got it perfect I added raspberry flavoring
I filled a ziploc baggie to do the frosting
