Good Budget Meal: Ham, Egg and Cheese Pot Pies
HAM, EGG, POTATO AND CHEESE POT PIES Makes 4 servings Ingredients 1 package puff pastry (contains two sheets) 4 4 ½? x 1 ¼? mini pie tins 1 15-oz. can diced white potatoes, rinsed and drained 1 15-oz. can diced carrots and peas, rinsed and drained 1 7-oz. package cooked ham, diced into ½? cubes 2 oz. shredded swiss cheese ½ teaspoon ground dry mustard Salt and pepper to taste 3 large eggs, beaten, plus one egg beaten with 1 tablespoon of water for egg wash Instructions Preheat oven to 400 degrees Fahrenheit. Unroll puff pastry sheets, one at a time, until flat. Cut into 4 squares each sheet. These will be used as the base and top of the pot pies. Coat pie tins with non-stick cooking spray. Line each one with one pastry square; set aside. In a large bowl, combine potatoes, carrots, peas, ham, cheese and dry mustard. Season with salt and pepper; mix well. Pour ¼ of beaten egg into each pie tin. Layer on ham, cheese and vegetable mixture. Top with one pastry square. Crimp edges of pastry to seal, then cut small hole into top of pie to ventilate. Brush top of each pie with egg wash. Bake for 30-45 minutes. Remove from oven and serve.
