Good Budget Meal: Hamburger Hash
I love eating breakfast for dinner--I mean, what can be simpler? Then factor in how eggs really are a great source of protein and you're good to go! I like Eggsland's Best Eggs because they have the extra Omege-3 boost that we all need; I buy the brown ones usually, and the quality is pretty consistent. But I digress...here's a recipe for a different way to use ground beef instead of the usual hamburger or pasta meat sauce. Give it a try and let me know what you think! HAMBURGER HASH Makes 4 servings Ingredients 2 tablespoons olive oil 1 lb. ground beef 1 medium onion, diced ½? cubes 1 small green pepper, diced small 1 small red pepper, diced small 1 15-oz. can diced potatoes, rinsed and drained well 1 garlic clove, minced Salt and pepper to taste Instructions Warm one tablespoon of olive oil in medium pan; add ground beef until cooked through. Drain on paper towels and set aside. Add remaining tablespoon of oil to the pan; sauté onion and green and red peppers over medium-low heat until softened, about 5 minutes. Add potatoes and garlic to the vegetables; mix well. Add salt and pepper to taste. Add beef to hash mixture. Cook on one side until potatoes and onions caramelize (brown) on the edges, about 5 minutes. Flip over and brown the other side. Remove from heat. Delicious paired with eggs and ketchup. Supermarket tally: Ground beef $3.71 Yellow onions $1.89 Green pepper $1.02 Red pepper $1.02 Can of diced potatoes $1.00 Total spent: $8.64 related searches : Good
