Good Morning Kitty Face! Harley wants to say hello SiM Readers Breakfast this morning was pretty amazing. Why is it that peanut butter NEVER gets old?! It?s just so good. I like it on sandwiches, made into a spicy sauce for noodles, on celery, in just about anything chocolaty, and as a baking ingredient. This morning I made Peanut Butter Pancakes. I wasn?t super hungry so my measurements were a little off and they didn?t really become an actual pancake more of a delicious peanutty concoction flattened and stuck together with peanut butter and flour. Sometimes trying to half already small recipes is a bad idea, but since this has no dairy (most importantly egg) you get away with it because every things edible right out of the bowl Hello vegan pancakes, enjoy eating them and licking the battery delicious bowl. Why do I make vegan? To eat the batter of course In the batter: 1/4 cup rolled oats 1 TBSP flour 1/8 tsp baking powder 1/8 tsp salt 1/2 TBSP sugar 3 TBSP water 1 TBSP peanut butter (I used creamy because that?s what we had, but I?d go crunchy if I were you) Toppings of choice This was a half batch and all it made were these 2 silver dollar pancakes, but they?re pretty rich with peanutty flavor and all I need is 2. I topped with strawberry jam and a few I of course added a wonderful organic and fair trade certified cup of joe from the beans of the ?bucks! No sugar in the coffee today, sweet breakfasts make for some delicious coffee when enjoyed together. Oatmeal, Craisin, Fall Spice Cookes I made these last night. Jaemen helped me make those snickerdoodles yesterday afternoon and he really wanted to take some to church this morning for the Meet and Greet time after service. He had to leave to see a play at the Theater in the Park in Carmel so I said I?d make another batch while he was gone. Well after a brief scrutinization of my fridge I realized I was out of eggs and butter so? no snickerdoodles. Hence my invented cookie was created. Ingredients 3/4 cup earth balance shortening 1/3 cup sugar 3/4 cup brown sugar 1 tsp vanilla 1/2 cup vanilla almond milk 1 cup flour 1/2 tsp baking soda 1/4 tsp ginger 1/2 tsp cinnamon (heaping) 1/4 tsp nutmeg 1/2 tsp pumpkin pie spice 3 cups rolled oats 1 cup cranberries and raisins. Directions pre heat oven to 350 degrees. cream shortening and sugars until well mixed, then add vanilla, almond milk and mix. add flour, baking soda and spice and mix. Once completely incorporated add oats and berries. Spoon out onto a baking sheet and cook 10-15 minutes. Mine were perfect at 12 minutes exactly, all 4 batches. These cookies are Vegan and amazing so please make them and enjoy some of that batter I hope you all have a wonderful Sunday.
