Gramin Thali of Madhya Pradesh & Latest Amul Topical ( April 09 )
To make the delicious thali you need dal, saag for bhujia and potatoes for bharta. Ingredients Onion, salt, chilli powder ½ teaspoon green chilli, finely chopped Gur, dahi , boora Wheat , chana, bajra flour 500 g saag ( mooli / sarson ) 2-3 pieces red chilli A pinch hing ( asafoetida ) 1 teaspoon garlic, chopped 2 teaspoon oil Ajwain seeds 4- 5 tablespoon ghee 1 bowl urad dal/ arhar dal 1 teaspoon turmeric 1 teaspoon ginger Method For dal : Cook dal normally as you cook with turmeric and salt. When it is tender keep aside. Heat the serving spoon, put a little ghee , one broken red chilli into small pieces and a little hing. Heat well and pour it over dal. Cover it, now add green chilli and ginger. For bhooji : Clean the saag and chop it. Wash it 2- 3 times in water very well. Now heat the oil and put garlic and broken red chillies into it. When it starts crackling, add leafy saag and a little salt. Stirring occasionally for 10 minutes. Keep aside. For bharta : Boil potatoes , peel and mash them. Add a little salt and chilli powder and heated ghee. Bharta is ready. For missi roti : Knead wheat flour and chana flour mixing half portion of each dal to make missi roti, add a little salt , cumin seeds, ajwain seeds. Make missi roti out of it and roast on low heat to make crisp chana roti. For bajra roti : Knead bajra flour with little warm water tightly and pat it 7 -8 times. Make rotis by only patting gently with hand and roast on tawa. Arrangement : First keep a bowl of dal. Add 1 teaspoon hot ghee over it. Then keep a bowl of bharta , bhooji , curd / gur/ boora .
