Grandma's Tomato Jam
As a child I always looked forward to spending weekends at my Grandparents'. Nothing was better than Grandma's cookin'! On Sunday mornings her home was filled with the tantalizing aromas of bacon, eggs, hash browns, and buttermilk biscuits topped with her home-made tomato jam. Yep, I said tomato jam. Most people have never heard of it..and consequently wrinkle up their noses, but it's so delicious! And with many of us wondering what to do with all of these tomatos, I thought I'd break down and share my Grandma's recipe.
Ingredients: 3 cups tomatoes 1-1/2 teaspoon lemon rind 1/4 cup lemon juice 6 cups sugar 2 pouches of Pectin Directions: Scald, peel,and chop tomatoes. Place all ingredients in a large stock pot, bring to a boil and simmer 10 minutes. Bring to a rolling boil and add 2 pouches of pectin ( I used Certo). Boil 2-3 minutes and then place in clean, hot jars. Makes apporoximately 4-6 half pints. ![]() related searches : Grandma
