Greek-Inspired Chopped Kale Salad
Kale is packed with nutrients. Not typically eaten raw, this salad is a good way to get kale's raw nutritive value very once in a while. You can make this salad in advance and let marinade in the refrigerator for 1-3 days.
Difficulty Level: Easy What you need: 1 head kale, chopped 1 cup red bell pepper, diced 1/2 cup green bell pepper, diced 1 cup red onion, chopped 3/4 cup Kalamata olives, halved 5-10 pepperoncini, seeded and chopped For the dressing: 4 small cloves garlic, chopped juice of 1 lemon 1/4 cup virgin olive oil 2 tbsp. red wine vinegar 1/2 tsp. pinch of dried oregano sea salt and ground pepper, to taste What to do: Combine all salad ingredients in a large bowl and toss with the dressing.
