Green Bean Bobotie
I really enjoy bobotie but in all honesty I do not enjoy this variation of the traditional recipe. During my military training many years ago we used to eat this dish quite often. Every time I see this variation it brings back some not so good memories. My children are not very keen on vegetables but this dish they do eat. So despite my thoughts on the dish it is something that I make every now and again. Ingredients 500g (about 1 pound) green beans (sliced in any way you prefer) 2 medium onions (cut in rings) 2 tablespoons butter 1 tablespoon curry powder (as hot as you prefer) 1 teaspoon salt pinch black pepper 1 tablespoon sugar 2 tablespoons vinegar 1 thick slice bread 1 cup milk 2 eggs (whisked) Method Cook the green beans until they are soft. Sauté onions in butter. Remove onions from heat and stir curry powder, salt, pepper, sugar and vinegar into onion mixture. Soak bread in milk and mix this into the green beans. Add onion mixture and eggs to the green beans and stir well. Put mixture in greased oven dish and bake at 180°C until set.
