Green Bean Casserole

As I typed this recipe, my daughter said "You are NOT going to share that recipe are you, I don't anyone else to have it!" Oh dear! Anyway................

You know it's Thanksgiving or Christmas when someone makes you a Green Bean Casserole! :)

Even if you aren't a great lover of green beans, you really REALLY should try this! My daughter won't eat green beans without a fight LOL but she CRAVES this! My English husband will try pretty much any type of food. When he tried this he couldn't stop complimenting it. (as he tried to take custody of the casserole dish) There was a near "table war" between him & my daughter..... They are both southern food junkies now!

Enough chatting...... here's the recipe!



Recipe:

2 tablespoons butter

2 tablespoons all-purpose flour

1 teaspoon salt

1/2 teaspoon white sugar

1/2 to 1 cup onion, diced (depending on how much you like onion!)

1/2 cup sour cream

1 small can of cream of mushroom soup (Campbell's is the best)

3 (14.5 ounce) cans French style green beans, drained

2 cups shredded Cheddar cheese

1/2 cup crumbled Ritx Crackers

1 tablespoon butter, melted



Directions:

1.Preheat oven to 350 degrees F (175 degrees C).

2. Melt 2 tablespoons butter in a large skillet over medium heat. Stir in flour until smooth, and cook for one minute.Add onion, cook for about a minute, then stir in the salt, sugar, and sour cream & soup. Add green beans, and stir to coat.

3. Transfer the mixture to a 2 1/2 quart casserole dish. Spread shredded cheese over the top. In a small bowl, toss together cracker crumbs and remaining butter, and sprinkle over the cheese.

4. Bake for 30 minutes in the preheated oven, or until the top is golden and cheese is bubbly.

5. Let stand for 3 minutes (If you can keep your family away that long!) & serve.



** note**

For all of you very hard core southern foodies, you can cook 5 strips of bacon (cook very crispy & reserve). Then using the grease to fry the onion/flour/butter in. Last, add crumbled up bacon on top of the casserole with the Ritz mixture. Tastes GREAT!! (but adds to the calories!)
