Green Chana( Choliya Paratha)

Punjabiis are famous for their Paratha and not without reason. You can make paratha out of any filling its upto your creativity and imagination.

At our home paratha is one of the staples which are made on regular basis , as my  son loves eating them and needs variety too, so I have to keep experimenting with the fillings. Since green choliya is in season and its available for very short duration of 4-5 weeks so I become greedy for it and try to use it in as many ways as I can.

Yesterday we had some unexpected guests and I made this choliya paratha at home and these hot fluffy babies were first to disappear from the table J

Ingredients

1cup Whole wheat flour
1cup Warm milk/hot water
Salt to taste
Ghee 5 tbsp (clarified butter)
Ginger chopped 1tsp
Red chilli powder 1tsp
Amchur powder(dry mango powder)
Green chana(choliya) 1 cup
Direction
Make a stiff but pliable dough with wheat flour and water/milk like lachcha paratha.

Coarsly grind green choliya in a grinder by using pulse function one or two time dont over do it.

Now to prepare choliya filling take 1 tbsp ghee in a non stick pan add ginger to it saute it for a minute or so.

 Add choliya to this pan and along with that add salt, chilli powder and mango powder and mix well cook the mixture till it becomes dry.

Divide the dough into 3 parts. take one part and roll out it into a round disk.



Put 2 Tbsp of filling on the paratha.



Fold this paratha like this.

Dust this ball with flour and roll it out like this.



Heat a flat girdle or flat pan and smear it with ghee and put the rolled out paratha on to it.

Flip it over when black bubble start appearing on one side smear it with ghee .

 when other side is done flip it and cook each side one more till till becomes evenly cooked.

 Serve it hot with a big blob of butter.
