Green salad with Honey-Lemon Dressing I?m big into making my own dressing for salad. In fact, in all of the years since college, I have never once owned a bottle of salad dressing. This dressing has no vinegar or Dijon mustard, my standard go-to for dressing. It?s light and tangy with a hint of sweet. The pepper note from the Pecorino is the perfect finishing touch. 8 oz. spring mix 2 vine-ripened tomatoes, chopped 1 avocado, cut in half, seed removed, scooped out and chopped 1 cup shaved Pecorino Romano or Parmigiano Reggiano (use a vegetable peeler to shave slices) ¼ cup olive oil 2 tbsp. good honey Juice of 1 lemon
