Green Turkey Meatballs
![]() Ingredients 1 cup breadcrumbs 1 1/2 lb lean ground turkey 3 oz cooked ham chopped. 3 large eggs, beaten 1/2 cup fresh pecorino romano cheese 1/4 cup finely chopped fresh spinach 2 tbps finely shredded fresh basil 2 tbsp dried oregano salt and pepper a jar of marinara sauce. Preheat oven to 400ºF (200ºC). Take the tails off the spinach. Use a food processor and add the ham, spinach and basil. Process everything until fine. ![]() ![]() Place the mixture in a big bowl. Add the turkey the eggs, the cheese and oregano. Season with salt and pepper. Mix all ingredients well and with your hands (yes, your hands again!) shape into small meatballs. Transfer all meatballs into a lightly oiled sheet pan. ![]() Place meatballs in the oven and bake for about 30 minutes or until firm and brown. In a saucepan add the marinara sauce and the meatballs and combine. Let them simmer for a while. In the meantime, cook some small sized noodles (of any kind your kids like. We used small shell shaped pasta). Drain pasta after cooked following the instructions on the package. Place a little pasta on each plate and then add a couple of meatballs on top with a little sauce.
