Grilled Pesto Chicken Flatbread Sandwich
![]() I was preparing dinner two nights ago and I was planning on making a pesto based dish. I went to turn on the stove to boil some water, and it turns out my stove was broken! That night I had to postpone dinner and wait for my super to come to do repairs on the stove (which he never did). Here I am with some freshly made pesto, I decided to put it in a container and save it for dinner the next day. Then I realized pesto can be used as a spread on sandwiches. Despite not having a stove, George Foreman came to the rescue! I figured I can grill up some chicken, use some whole wheat pita bread, mozzarella cheese, and lettuce I had in my fridge. I would use basil but all I had was lettuce. All I needed to buy was a tomato, which Hurley picked up on the way home. The pesto gives the sandwich a bold flavor which makes this so worthwhile to make! This recipe is fast and easy to make. It took me roughly 20-25 minutes to make this, all thanks to my trusty George Foreman grill. Grilled Pesto Chicken Flatbread Sandwich 1 package chicken breast (I recommend buying thin sliced kind) 3 tbsp Pesto Click on the link for the Homemade Pesto Recipe 2 tbsp Extra Virgin Olive Oil 2 tbsp Italian seasoning by McCormick 2 tbsp Emeril Original Essence seasoning 4 tbsp Pesto spread (you can buy store bought pesto or use my homemade pesto sauce recipe) 4 Slices of Mozzarella Cheese 2 Whole Wheat Pita Bread 1 tomato sliced 2/3 cup basil (you can use lettuce like I did,if you do not have any basil on hand) Put Chicken Cutlets in a big bowl. Pour two tablespoons of EVOO and add Italian seasoning and Essence onto the chicken. Mix thoroughly to make sure seasoning is evenly distributed on the chicken. Heat up large grilling pan or use your George foreman on medium high heat. Put Chicken on the grill and cook both sides until you no longer see pink. Chicken is cooked properly when the juices run clear out of the chicken. Place on the side once it is ready. Cut the pita bread into halves, that way it will be easy to place on the grill. Spread the pesto onto the pita bread. I suggest putting the chicken on the bottom of the sandwich, then placing in the following order sliced tomatoes, mozzarella cheese and basil last. Put the other pita half on top of the sandwich base. Place the sandwich on the grill. If you're not using a George foreman grill, just place a heavy pan on top of the sandwich.
