Grilled Sausage and Onion Sandwich with Tomato Sauce, Parmesan, and Pickled Mushrooms

Busy schedule makes this a perfect time for sandwiches. Making a warm sandwich makes it feel a little more like a meal, even when I’m in a rush. Plus, this sausage-cheese-tomato sauce combination gave me an excellent excuse to use my recently made pickled mushrooms. Oh my goodness…so tasty. (I love that they give me an opportunity to preserve food in the winter, plus they give me another thing to use in quick, last-minute meals like this one.)

Served 2.

Leftover Potential: The components reheat well and can make another sandwich, a pizza, or a pasta dish.




1 Tbsp olive oil

1/2 onion, thinly sliced

salt and pepper, to taste




1/2 loaf of crusty bread

1/2 cup tomato sauce, warm

2 sausages, grilled

1/4 cups sliced or grated cheese

pickled mushrooms, to taste

pickled peppers, to taste




1. In a small saute pan, heat the olive oil over medium heat. Add the onions and saute until tender, about 4-5 minutes. Continue to cook until slightly charred and totally tender, 3-5 minutes more. Season with salt and pepper.

2. Build the sandwich by spreading tomato sauce on the bread, topping with sausage, and finishing with cheese. Run the sausage under the broiler until the cheese melts.

3. Add the mushrooms and peppers and enjoy while still warm!
