Grilled Thai Satay Chicken with Peanut Dipping Sauce
Can you seriously believe it is already JULY!? Where did June even go? Wasn?t I JUST attending the wine fest?! Sheesh. Time flies when you spend 80% of your time working??wish you were ?..you are having fun? I?d like to take back all complaints put forth to whomever it is in charge of Northern Michigan weather. This past holiday weekend was unBELIEVABLY gorgeous! I sufficiently restored my depleted vitamin D levels and I have the tan lines to prove it. I did everything from jet skiing, to hammock napping, to drinking wine at noon, to grilling out?canoeing, swimming, polka-ing, catching up with friends & family, and relaxing. Fab. My focus has clearly been on cooking outdoors, since anything involving an oven or stove turns the kitchen into a literal sauna. I love me some bikram yoga as much as the next girl, but I would prefer my deep inhales during tadasana to be filled with something other than the aroma of sauteed garlic. Grilled Thai Satay Chicken with Peanut Dipping Sauce Chicken & Marinade: 1 lb boneless, skinless chicken thighs 1/2 can light coconut milk 3 tbsp less sodium soy sauce 2 tbsp brown sugar 2 tsp ground ginger juice of 1/2 a lime large handful cilantro 1 large or 2 small garlic cloves 1 jalapeno, seeded if you prefer less spicy Sauce: 1/2 can coconut milk 1/3 cup creamy peanut butter 2 tbsp less sodium soy sauce 1 tbsp tomato paste juice from 1/2 a lime 2 tsp garlic powder 1 tsp cumin 1 tsp coriander 1. Prepare marinade by combining all ingredients & blending. Use a food processor, blender, magic bullet, hand blender, whatever floats your boat! 2. Pour marinade over chicken in a large plastic bag & let sit at least an hour, but up to overnight. 3. Preheat your grill to medium-high. Combine all ingredients for sauce in small pan & whisk till combined. Place pan on one side of the grill, and throw your marinated chicken down on the other. 4. Flip chicken after 4-5 minutes. Stir sauce occasionally. Color will darken as sauce bubbles & reduces. Remove chicken from grill after another 4-5 minutes, and let rest. Cook sauce until desired consistency. Serve chicken with peanut sauce- garnished with cilantro & chopped peanuts. Dip. Embrace your inner child. Lick fingers. Enjoy. Time to go sweat it off at softball!
