Grilled Vegetable Skewers with a Yogurt Dipping Sauce
These skewers are a great grilling alternative for vegetarians. I was a vegetarian for years and although I eat meat now, I like to eat several veg meals every week. I made these skewers as a side at the BBQ my husband and I had a few weeks ago, but they could easily be a light meal. A few nights later I actually made them for myself for dinner and paired them with a yogurt dipping sauce and hummus and crackers for a complete meal. The best thing about these skewers is the pineapple. So unexpected and delicious...and as you may know, I loooooove grilled pineapple. Enjoy! Grilled Vegetable Skewers (serves 2) -1 red pepper, cut into large pieces -1 green pepper, cut into large pieces -1 small onion, cut into large pieces -1 yellow zucchini, cut into large pieces-1 green zucchini, cut into large pieces -8 large pieces of pineapple (2 per skewer)-olive oil, salt and pepper -skewers 1. If you are using bamboo skewers, soak them in water for about 10 minutes prior to use. This will help them to not burn. 2. Put an equal amount of each veg on each skewer. Drizzle them with olive oil and sprinkle with salt and pepper. Grill on medium heat for about 10 minutes, rotating frequently. Yogurt Dipping Sauce -1 cup non-fat Greek style yogurt-1/4 cup low fat mayonnaise -1/3 cup cucumber, diced small -2 tablespoons dried dill -the juice from one lemon -2 teaspoons garlic powder -3 tablespoon freshly chopped chives -salt and pepper 1. Mix all together, taste, add salt and pepper if necessary. You will have leftovers of this and it will last about a week in the fridge. It is great as a veggie dip or inside a wrap with hummus and veggies...or over grilled chicken. Yum! related searches : Grilled
