Grouper with Mango, Papaya Salsa for 2

So, here it is Sunday, around 2:00PM...ready to watch the World Cup finals, my neighbor knocking on my door asking if he could take my Sunday paper. In the meantime, instead, he plops down on my sofa to read the paper at my place, which is OK, but I was getting ready to do my own thing, without much preparation, for the dinner, having my friend over, from across the street. On Saturday, she agreed to come over for dinner, after about two previous cancellation.(she's a very busy girl and works on Sunday too) Plus she has a new love with the usual ups-and-downs which is neither here, nor there, which I cannot divulge information on this subject. She also is getting ready to run for the big marathon in New York this fall. Anyway, my neighbor is a single middle age man, but so hard to understand...and to think I am the one that people can't understand! Getting back to my dinner story. While I'm getting ready to watch the Finals, which by the way, I am so ECSTATIC about. Yeahhh! Spain finally won the first World Cup, EVER! In the meantime...my neighbor is reading, and talking out loud about what he is reading, and asking me a question what he sees in the paper. All day spa at the Ritz Carlton, for $50.00. First, he asks, if I know where the Ritz Carlton is located, I tell him where, and of course why? ...thinking, wow, he is going to take me there for lunch, or dinner...NOT! He is wanting to make an appointment for himself to spend a day at the spa, for $50.00. Why couldn't he offer that to me?... after treating him to 3 gourmet dinners at my place, and for him to call his mom in Michigan, right in the middle of dinner. "Mom, you'll never believe what I'm eating"...at that time, I actually made sweet plantains which were so delicious, oh, but that was just appetizers, Since it was an impromptu dinner, all I could make at the last minute was spaghetti carbonara, with Hungarian szalonna, it is similar to the Italian pancetta...but better. I of course order that from Bende,http://www.bende.com/ in Illinois, and love to make nice crackling bacon bits out of that...the aroma just permeates through my little condo apartment...have to open my windows to air the place out. So much for my neighbor. I didn't realize, I had a text from my friend, in the meantime, cancelling, yet again, for about the 4th time. Now what should I do? Invite my "schnorrer" neighbor, freeze the fish, that I bought the day before, eat the mango, and the papaya?...NO! I decided to cook the dinner for myself. Mind you, I do not spend nearly $20.00 for a piece of fish, but for my friend, yes, because she is always so generous with me. OK, now my neighbor finished the paper, but I would not tell him about my dilemma, or I would never get him to leave...he would of course ask me, if I have some wine?...Total "chutzpa"...what nerve! ...and to think these are the kind of available men I keep running into. Another story! So, I finally made the exquisite grouper fish for myself, but not before I texted my friend to let her know what she missed out of.( I think I just lost another friend...sigh..) Recipe, to follow




Grouper with Mango and Papaya Salsa

1 large piece of grouper fish, about 1 pound or a little more
1/2 cup of Panko (Japanese bread crumbs)
1 cup of  "Naranja Agria) Sour orange marinade
1 fresh lime
a handful of chopped cilantro
dry herbs, such as Mrs Dash or garlic and pepper mix, or lemon pepper,
 herb of your choice
1 Tablespoon extra virgin olive oil
2 Tablespoons unsalted butter

Mango. Papaya Salsa

1 large ripe mango peeled and cut into small cubes
1 small sweet papaya, same size as mango, peeled and cut into cubes
1/2 a red onion chopped
2 jalapeno peppers sliced, and cut small
Juice of 1 whole lime
Juice of 1  whole lemon
sea salt, and freshly ground pepper
1 small handful chopped cilantro (you can use parsley, or basil if you prefer)

For the fish:

Marinate fish with the sour orange marinade, no longer than 30 minutes before cooking, otherwise it will break up the fibers. Squeeze all the lime juice on the fish, and sprinkle the dry herbs on it, and put back in frig. for at least 30 minutes, but not longer. In the meantime melt butter, and olive oil together in a large nonstick skillet, and heat up your broiler...in my case, I like to use my toaster oven broiler, it works probably even better than the big oven. Get your fish ready pat on the fish, the panko crumbs, you can also sprinkle some fresh cilantro on it at this time. Now spoon some of the mixed oil, and butter right over the panko crumbs on top, and pat it down with a large spoon. Important: Do not put crumbs on the bottom, it will only deter it from cooking properly, and it only gets soggy. With a spatula, carefully place the fish in the skillet, and cook only the bottom for about 5 minutes. You can actually see it cooking, it gets cooked about halfway up, and now you can transfer it to a aluminum foil lined pan, and broil the top until it gets nice and crunchy...probably another 5 minutes, no more than that. Carefully take it out, and place on a serving platter, of plate, serves 2.

For the Mango Papaya Salsa:

Preferably, have everything prepped up the night before, and chill in the refrigerator, or at least several hours before. This salsa is very good with chicken too. Does not need sweetening, and it does not need oil, or anything else, just the natural juices marinating together. It is fat-free, for sure, and delicious by itself, as well.
