Gujia & Flour Gajak ( Indian Sweets )
Gujia Serves : 8 Cooking time - 1 hour You need 250 g moong dal 100 g sugar 1/4 cup water 2 cups all purpose flour Water for kneading 1/2 cup oil or ghee 1/2 cup mixed dry fruits ( almonds, cashew nuts, raisins etc ) 1/2 teaspoon cardamom powder Method For filling : Soak moong dal overnight. Grind it to a paste. Heat oil in a kadai and then add the moong paste. Keep stirring all the time till brown. Add 1/4 cup water and sugar. Mix well and cook for 5 minutes or till the sugar melts and all water is absorbed by the moong dal. Add all the dry fruits and cardamom powder and keep aside. For covering : Mix 1/2 cup of oil in the all purpose flour. Mix well and add enough water to knead into a smooth dough. Divide the dough into small balls and roll into small puris. Stuff the filling into the puri and close the edge with water or liquid flour. Remember... the ends should be properly closed. Heat oil in a kadai and fry the gujias till golden brown. Flour Gajak Cooking time : 15 minutes Serves : 10 - 12 You need 1 cup flour 1/2 cup ghee 1 cup khoya 1 cup powdered sugar 1/2 cup ground coconut 1 tablespoon chopped almonds and melon seeds 1/2 teaspoon cardamom powder 2 - 3 teaspoon mil for sprinkling Method Heat ghee and fry flour till golden brown. Also fry the khoya. Take off from the heat and mix with sugar and half of the chopped almonds and melon seeds. Sprinkle some milk over it and again put the pan on the heat and mix well. Grease a thali and pour the mixture i to it. Press and sprinkle the remaining nuts. Let it cool and then cut into rectangular or square shape.
