Hail Caesar (Salad)

Tonight?s Mystery Box ingredient was not one I was excited about?

Yes anchovies?.

In all their disgusting salty hairy glory?

Ugh.

I cannot stand anchovies, probably due to their texture more than anything. But, in the spirit of the Mystery Box, they had to make an appearance in tonight?s dinner.

But what to make?

How could I serve anchovies in a way that would hide their horrible texture?

Then I had a lightbulb moment?.Caesar Salad! Where the anchovies could be hidden in the dressing?

And not left whole.

I decided to make a Caesar ?based? dressing. I say ?based? because it did not contain any eggs, as the traditional Caesar dressing does.

Rather, I ?healthified? my version, relying on natural yoghurt, tahini and a dash of mayo to provide the creaminess.

Combined with garlic, anchovies, dijon mustard and lemon juice for an extra flavour kick. No oil required.

Then it was on to the next star ingredient of the salad.

Which did contain oil.

GF garlic croutons. GF bread, cubed, and sprinkled with my favourite garlic olive oil.

Baked until crispy.

Time to layer. Starting with lettuce and celery?

And a sprinkle of parmesan.

And let?s not forget the Caesar dressing (served on the side because I hate when salads are drowned in dressing!)

Although, I can assure you, by the end both our plates looked like a lot more like this:

Hail Caesar (Salad) indeed!

Hail Caesar Dressing (serves 4)

1/2 cup natural yoghurt 1 tbs tahini 1 tbs mayonnaise 2 cloves garlic, minced 2 anchovy fillets 1/2 lemon, juiced 1 tbs dijon mustard 1/4 cup grated parmesan Process all ingredients in a food processor until thick and creamy.
