Harry Potter + Kenpo X
![]() Good Afternoon! It is an ogre cast day here in Austin and a perfect backdrop for going to see the new Harry Potter movie. My son is a huge Harry Potter fan and I love the fact that this spurs him on to read. He is reading book 5 now and is excited to finish out the series by the end of the summer. I have Thursday mornings off and was excited to sleep in until 7:00am! That is late for me and I honestly would have slept longer if the darn rooster next door would not have been doing his job so well. Breakfast was Cottage Cheese + Blueberries + Almonds 1 cup 1 % Milk Cottage Cheese 1/2 cup fresh blueberries 1 tablespoon Almond Slices Yum! This was a great protein packed breakfast and kept me going for a long time. I had a nice morning with the kids and was able to squeeze in the P90X- Kenpo X Dvd before heading out to the movie. I loved it! I had not tried the Kenpo yet and really enjoyed it. The thought of running on the treadmill today was not motivating me what so ever, so I was glad to have something to get me going. I really love the P90X DVD series. These are great especially for days when I need a little kick in the butt. The movie was longer than I had anticipated and we had a couple errands to run after it. We are having a small birthday party for Emmet on Saturday. He just wanted to have a few buddies over and we are going to make pizza, cookie cake and ice cream snoballs. We picked up the party favors today at Barnes & Noble, we decided on getting all the boys the same book so that they can read it and discuss it together. Needless to say after we got home, I was HUNGRY! I decided to make a Mexican Portabello Pizza Salad. Mexican Portabello Pizza Salad 1 Portabello Mushroom 1 tablespoon Poblano Chile Pesto 1/4 cup of 2% Milk Mexican Cheese 1 tablespoon salsa 2 slices of avocado, diced Broil lightly oiled portabello mushroom for 7 minutes cap side up. Then remove and flip mushroom add pesto and cheese and broil for until cheese is golden and bubbly. Remove from oven, top with salsa and avocado and serve on a bed of salad. Salad 2 cups Spring Mix Handful of Grape Tomatoes Red Onion Dressed with 1 tablespoon dijon mustard and 1 tablespoon balsamic vinegar. Mexican Portabello Pizza Salad ![]() This was oh so yummy! I ate sort of late for me so plan on having something light for dinner.... possibly a little gazpacho soup leftover from yesterday. Dessert is on the horizon as well.... I just got an email from Gourmet Magazine and it is all about ice cream! I have been way into ice cream lately and love the Waffle Bowl Sundae's with some sort of light ice cream or frozen yogurt. It sort of makes me feel like a kid again. I went a little crazy at the store the other day and bought: Dreyer's Slow-Churn Take the Cake Dreyer's Slow Churn Caramel Praline Crunch Dreyer's Slow Churn Mud Pie Dreyer's Slow Churn Yogurt Blend Tart Mango Dreyer's Slow Churn Yogurt Blend Vanilla To my defense they were having a sale... but my husband was a little perplexed by why I had to buy all of those flavors at once.
