Healthy Dinner Options
Good Morning! I hope everyone is doing well. I am home briefly and then off to a hot and sweaty yoga class that I can't wait for. Today was Teacher Appreciation Day and we did a coffee bar + treats which I believe was a big success. The teachers are awesome and deserve a little something for teaching and caring for our kids everyday. Thank you Teachers! So I have been really busy in the evenings and feel like I have not blogged about dinner in a REALLY long time so was going to share a few quicky dinners that we have been eating lately. The first one is an Apple and Sunflower Seed Chopped Salad that truly is spectacular. Apple and Sunflower Seed Chopped Salad 2 cups spinach, chopped 1/2 cup Mann's Sunny Shores Broccoli Slaw 1/2 yellow bell pepper, chopped 6 grape tomatoes, halved 1 carrot, chopped 1/2 a Honeycrisp Apple, diced 1/2 tbsp of sunflower seeds Dressed with 1 tsp sunflower oil, 1 tbsp of balsamic vinegar and 1 tbsp of dijon mustard whisked together. Delish! Another quick and healthy dinner is Greek Egg Salad on an English Muffin. We are big on breakfast for dinner in my household and this came up as an option one night. Eggs are a great source of protein and I made the egg salad with 1 whole egg and 2 egg whites. The only reason it is greek is because I substitute greek yogurt in place of mayo. Greek Egg Salad on English Muffin 1 whole egg, hard boiled 2 egg whites, hard boiled 1 tbsp Fage 2% Greek Yogurt 1 tbsp dijon Mustard 1/2 of an Ezekiel 7-Sprouted Grain English Muffin The served the egg salad warm and it was amazing. Every once in a while egg salad just hits the spot. This next one is my ultra quick go-to meal that is extremely filling and loaded with veggies as well. Veggie Topped Sweet Potato 1/2 sweet potato, baked 1 container of Green Giant Immunity Blend Frozen Vegetables Immunity Blend ? Colorful vegetables have an array of important nutrients that your body needs. Over 50% of Americans are missing the mark on getting the recommended amount of vitamins A and C. Our immunity blends are full of color and flavor! Choose between two great combinations: broccoli florets, julienne carrots and red and yellow sweet pepper strips in a garlic-herb infused extra virgin olive oil seasoning or cauliflower florets, sliced orange and yellow carrots and dried cranberries lightly tossed with a flavorful butter sauce. Both are naturally rich in antioxidant vitamins A & C to help support a healthy immune system. I am not a huge frozen food person but these frozen veggies are great and it is an easy way to get some veggies into my diet each day. Love this meal. And last but not least- Breakfast Tacos. I found those wonderful La Tortilla Factory Handmade Corn Tortillas and whipped up Breakfast Tacos for dinner one night and the whole family loves Breakfast Taco night. Breakfast Tacos 2 La Tortilla Factory Handmade Style Corn Tortillas 1 whole egg 3 egg whites 1/4 cup Mexican Cheese, divided 1/2 cup fat-free refried beans Salsa I need to work on making dinner more of a priority. We have all been busy and we have tended to just do quick and simple dinners. I am going to buy some fish this weekend and have a nice sit down meal with a lean protein, veggie and grain.
