Healthy Vegetable Quesadillas From Scratch

I know I haven't been posting for so long,  just been busy in traveling and then celebrating all the festivals including Diwali and Thanksgiving :). But I am back now and have quite a few  recipes in my hard disc ready to be posted here.
As I mentioned in the last post, this recipe is for healthy vegetable quesadillas. Quesadillas are delicious and easy to make especially if you have tortillas on hand, you can pretty much fill anything from leftover vegetables to cooked ground meat in them.
I made the tortillas at home and I can  say that you won't miss store bought tortillas a bit if you try these.

Ingredients- for the tortillas

Whole wheat flour- 1 cup ( you can  use all purpose flour if you like)All purpose flour- 1/2 cup Oil- 2 tablespoonSalt - a pinchWarm water- as required to knead the dough
Ingredients - for the filling

Mushrooms - 1  packet chopped Onions- 1 small  choppedCapsicum- 1 choppedGarlic- 2 pods gratedSalt- to tastePepper- to tasteShredded  cheese-  few ounces. (you can use any cheese, I used monterey jack cheese)
Method- for the tortillas

Mix all the dry ingredients for the tortillas. Knead the flour into a dough with the help of warm water and keep aside for few minutes. Take golf sized balls and make flat rounds with the help of rolling pin and dry flour. (should look like a tortilla). Now heat a griddle and cook these rolled tortillas from both sides till you see brown spots on both  sides. Tortillas are ready!Can be stored in the fridge for 6-7 days or you can freeze them too.
Method- for the filling

Heat oil in a  pan/wokAdd garlic and cook for few secondsAdd onions and cook till light brownNow  add capsicum and cook on high heat for 2 to 3 minutes.Add mushrooms and again cook on high heat.Add pepper and cook till mushrooms are brown. Don't cook for too long else mushrooms will start leaving water.Add salt at the end, mix well and keep aside to cool
Method- For the quesadillas

1. Take a tortilla and spread some filling on half of the tortilla.
2. Sprinkle lots of  cheese on top of  it.
3. Fold the tortilla.
4. Heat a griddle.
5. Brush both sides of the filled tortillas with some  oil.
6 Cook from both sides on medium heat till they are crispy.
7. Cut them into wedges with pizza cutter or knife.

Serve with Guacamole(recipe here), salsa (recipe here) and sour cream.
