Valentine’s Day is not here yet but I can start with some fun food early. I’ve just bought a heart-shaped silicon ring the other day to make heart-shaped pikelets for my family. It’s a great way to tell them that I love them. I actually enjoyed making them. Of course I get lots of hugs from everyone!


My family loves pikelets. And if you follow my blog, you probably can guess what I eat it with. Of course with my favourite homemade condensed milk!!! Oh…it was just so delicious. I put so much that it was dripping all over. Well, I had great fun licking it from my fingers. My children are not crazy like me over condensed milk. They love it with butter sprinkled with sugar over it. They don’t know what they miss…haha.


Click How To Make Condensed Milk if you want to learn how to make it yourself. It’s cheap, simple and taste superb. I made again the other day and I cut down on the milk powder to 3 cups so that it is more runny.


To me, pikelets are pancakes, just thicker. I was at a supermarket the other day and these pikelets were sold in small packets. Gosh….they are expensive! Come to think of it, the ingredients are actually so cheap.

These pikelets are easy to make but need patience. I don’t make them often because I’m not a patient cook. I like everything simple and quick. It has to be fun to keep me in the kitchen longer…haha. The heart-shaped silicon ring definitely helped! Here’s my simple recipe to share:


Ingredients

2C self-raising flour

1/2C sugar

1/2t baking soda

2 eggs (beaten)

1 & 1/2C milk

1t vinegar

40g butter (melted)


Combine eggs, milk, vinegar, sugar and butter in bowl and whisk. Then add the sieved flour and baking soda and mix well.

Heat up a frying pan. Use low fire. Add a little oil and scoop some batter into it. When bubbles appear on the surface, turn over and fry further until lightly browned on the bottom. The first piece is always not very nice.

For subsequent pieces, you don’t need to put any more oil and you should be able to get a very even, golden colour on one side. They are very delicious with butter, jam, peanut butter or condensed milk.
