Hearty Omega Waffles
A waffle that?s as good for the heart as it is for the belly! With the flax seed and hemp seeds, you?re asking for a double shot of omega?s that will please your heart and your cholesterol. With the oat bran and whole wheat flour, your adding delicious fiber that keeps digestion in check! How can you go wrong with these power-packed breakfast nibbles? All that?s lacking is a glass of fresh squeezed OJ or other delicious smoothie, like Pango Mango. This recipe makes about 8 Belgian waffles, and they freeze beautifully. Ingredients: 2 TBSP flax in 4 TBSP warm water 1.5 C hemp and oat milk + 1.5 tsp apple cider vinegar 2 TBSP hemp seeds 1/4 C oat bran 1/4 C hemp flour 2/3 C white whole wheat 1/3 C bread flour 1/3 C 100% whole wheat flour 1/2 C All-purpose flour 1 tsp salt 4 TBSP sugar 2 tsp vanilla extract 1/2 C melted Earth Balance Vegan Butter Directions: 1. Combine the ground flax with the warm water, set aside. Combine hemp/oat milk with apple cider vinegar, set aside. Whisk together the flours, baking powder, salt, and sugar. In a separate bowl, whisk together the flax, milk, and melted butter. Mix together the wet and dry ingredients, stirring just till combined. 2. Cook the waffles as directed in the instructions that came with your waffle iron. Mine took about 10-12 minutes for them to be crispy, but you could pull the out at 8 minutes if you like softer waffles. Orange Variation: Use 1 C hemp milk + 1 tsp apple cider vinegar, and 1/4 C fresh OJ; sub 1 tsp orange extract for 1 tsp vanilla; add 1 tsp orange zest Happy Cooking!
