Heirloom Grape Tomatoes with Goat Cheese and Thyme
I get excited about a good tomato. It?s not every day that markets carry sweet, juicy varieties. When I saw heirloom grape tomatoes at the store, I bought them mainly because of their pretty assorted colors. When I tasted them I was taken aback by how delicious they were. They were so good that I didn?t add the olive oil and balsamic vinegar suggested as optional in this recipe. So taste your tomatoes first, and depending on how good they are decide if you need to add or leave out oil and vinegar. Sometimes ingredients are so good that you don?t want to mess with them much. Heirloom Grape Tomatoes with Goat Cheese and Thyme 4 servings 1 pint heirloom grape tomatoes, halved lengthwise Sea salt and freshly ground pepper, to taste 4 oz goat cheese, cubed 1 teaspoon fresh thyme leaves 2 tablespoons extra virgin olive oil (optional) 2 tablespoons balsamic vinegar (optional) Arrange the heirloom tomatoes on the serving plate. Season them with salt and pepper. Top them with goat cheese and thyme leaves. Drizzle the salad with olive oil and balsamic vinegar.
