Hidden Treasure Cookies (egg-less and milk-less)

These cookies are especially for my little cousin Cody who's allergic to milk, eggs and nuts (he would be mad to hear me call him little since he's now 14!). His twin brother Quincy was fortunate enough to outgrow his milk and egg allergy, but Cody's still stuck with it. I made these cookies for him to eat at Chase's birthday party. I always try to make a treat Cody can enjoy at the parties because I don't want him to watch everyone else enjoying a sweet treat. This reminds me of the joke I pulled on him a few years ago. I bought rice milk and made him some homemade ice cream. Chase was a baby and I was nursing him. When I took Cody the ice cream I waited until he took a bite and then told him I made it out of breast milk (because he nursed when he was a baby and wasn't allergic to breast milk). Needless to say he wouldn't eat any more of it. Even today you can't convince him it wasn't really made out of breast milk! Milk or no milk, these cookies are so good! They're like a gooey fudge brownie with a yummy, sugary, crunchy outside and a marshmallowy center. They were a big hit at the party! Enjoy :)

Here are Cody, Quincy and Chase. A boy's never to old to enjoy a box of toy trucks and tractors!



HIDDEN TREASURE COOKIES (EGG-LESS AND MILK-LESS)
1/2 cup cocoa powder
1 cups sugar
1/4 cup vegetable oil
2 egg replacers (recipe follows)
1 tsp. vanilla
1 cup flour
1 tsp. baking powder
1/4 tsp. salt
1/4 cup powdered sugar
mini marshmallows (or big ones cut into 4 pieces)


In medium bowl mix cocoa, sugar and oil. Beat in the egg replacer; stir in vanilla. Combine flour, baking powder and salt. Stir into cocoa mixture. Cover and chill 4 hours (or put in the freezer for about 30 minutes). Preheat oven to 350. Lightly grease cookie sheet. Roll dough into 1 inch balls. Using your finger poke a whole into the ball and place 2 mini marshmallows inside. Form dough back into a ball making sure marshmallow's completely covered and coat with powdered sugar. Bake in preheated oven for 10-12 minutes. Leave on cookie sheet for 1 minute and then transfer to wire rack or brown paper.


EGG REPLACER

1 egg = 2 TBSP water + 1 TBSP oil + 2 tsp baking powder

Make sure you mix these together and then add to the recipe (don't just throw them all into the mix, they must be mixed together first).
