Homemade Mac & Cheese
{dangerously cheesy...what? are we cheetos now?}
This recipe comes from my grandma- she used to make this for me all the time when I little. Come to think of it, both my grandma's made this for me all the time! Mac & cheese has been my favorite food since I was eating solids. I'm sure my mother would comply. This last week I came down with the worst flu ever- and nothing sounded good besides comfort food to the max. What better than mac & cheese? Nothing. Ingredients: 3 cups elbow macaroni, uncooked 2 cups milk 1 cup cheddar cheese, grated 3-5 slices of Velveeta (the ones next to the Kraft Singles) 2 tablespoons butter 2 tablespoons flour 1/4 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon mustard 1/4 teaspoon Worcestershire sauce Directions: Boil macaroni according to package directions. Meanwhile in a large sauce pan add butter, milk and flour- cook on medium heat, stirring frequently so that the flour doesn't clump or burn to the bottom of pan. The mixture will begin to thicken the longer it's cooked. If mixture is too thin, add a couple pinches of flour until it reaches desired thickness. Add salt, pepper, mustard, and Worcestershire sauce. Once combined, add in the cheeses. You can essentially use any variety you'd like- such as Mozzarella, smoked Gouda or white cheddar. Drain your pasta once it's fully cooked, and pour cheese sauce over macaroni and mix together. Garnish with a little grated cheese if desired. Serve as a main dish or as a side.
