Homemade Raw Almond Butter (Naturally Gluten-Free)

This is as simple as it gets folks. I made this recipe in literally 5 minutes. All you need is a food processor, almonds (or any nut you like), oil, salt and honey. That is it. I am sure there are lots of other creative ways to make almond butter, but I will stick with the one that has worked best for me over the years. I have toasted the almonds before for flavor but I seem to always go back to the standard raw almond butter. Pecans, cashews and walnuts work well in this recipe. Also if you prefer agave, switch out the honey for agave  After I made the almond butter, I toasted some Canyon Bakehouse Cinnamon Raisin bread and spread the almond butter on top. It was a perfect snack to go along with a cup of hot tea. Enjoy!


Ingredients:


1)      1 cup raw almonds


2)      1 tablespoon oil (I used canola, but grapeseed oil and macadamia nut oil have worked for me as well)


3)      Tiny pinch salt (optional)


4)      ½ tablespoon honey


Instructions:


Start by grinding the almonds to a coarse texture in the food processor.


Stream in your tablespoon of oil and continue mixing the nut mixture in the processor.


Add in the salt (optional) and honey and mix again.


The mixture should start looking creamy (still some grit) in appearance and it will start forming a ball.


Makes about 3/4 cup packed almond butter.


*note: Canyon Bakehouse products are available for sell at Whole Foods. They have several different gluten-free breads, focaccia and muffins. Their bread is fantastic in texture. It reminds me of Udi?s but more flexible. Great product! If you can?t make it to Whole Foods to purchase, they do offer online ordering.
