Homemade Rosemary Black Olive Bread

Making homemade bread is the one area that makes me nervous.  REALLY!  The dough can actually end up being a door stop….which is useful….FOR THE DOOR…not my tummy.


This recipe is really wonderful, and really easy to make.  I love the hard crust, it is perfect to enjoy with warm cozy soup.  Here is the recipe from Cake Duchess



To start the process, mix the ingredients in a large bowl with a wooden spoon.  Once the ingredients are  mixed, cover bowl with plastic wrap.  Let dough sit for 12-18 hours at room temperature.



For the recipe, I decided to use left-over fresh rosemary for the bread.  I took about 2-3 large stalks of the rosemary, removed the leaves from the stalk, and chopped finely.  Add to the flour, and then mix according to directions.



Here is the dough after it has been sitting for 12-18 hours.



Add about 3/4 of a 15 oz can of black olives chopped.  Carefully mix into dough.



Now place dough on a generously floured surface, and form into a ball.



Once  you have the dough formed into a ball.  You will have to let it sit for another 1-2 hours.  Take a dish towel, and place flour, or cornmeal generously on towel, and wrap dough, let sit in warm place.



I believe Juno got tired of waiting for the bread, she said to wake her when it is finished!



Now it is finally time to cook this beautiful dough.  Really when you think about it, it is easy to make, BUT it is the waiting that is tough.



NOW this is were I messed up, but thank goodness the bread still turned out…WHEW!!!   DON’T leave your oven on broil, make sure you have it on bake, ugh!!  I caught it just in time, and look how pretty it is:)



I decided to make a grilled cheese sandwich for dinner, I didn’t want to add too much.  The flavors in the bread are that beautiful!
