Homemade Tomato Sauce
From now on I will no longer buy pre-made tomato sauce. What was I thinking? So, am I officially Italian now? teehee. I had no idea that it was this easy to make my own tomato sauce. I found this simple and delicious recipe from New Italian Recipes with some of my modifications. Its quick, flavorful and most importantly fresh. Ingredients 9 Fresh Roma Tomatoes 2 tbsp of Extra Virgin Olive Oil 1 Medium Onion, Diced 7 Garlic Cloves, Crushed and sliced thinly Full Handful of Fresh Basil, Diced 1/2 Cup Sherry Cooking Wine 1 tbsp Sugar Salt & Pepper Yields about 3 cups Directions 1. Bring a large pot of water to a boil and place the tomatoes in the water and allow the skin to get wrinkled. Prepare a large bowl with cold water and cool the tomatoes and remove skins before dicing. Remove seeds through a mesh sieve. 2. A) Sauté onions in olive oil over low heat, cover for 10-12 minutes. B) Add garlic, basil and recover for another 5 minutes or so. C) Uncover and add wine and reduce by half. D) Add tomatoes and simmer for about 15 minutes or so. 3. I pureed my sauce. You do not have to if you wish to leave it chunky. I had some frozen Korean Beef & Tofu Burger patties left in the freezer. So, I decided to make meatballs with them to go along with the spaghetti last night. If you have a gluten or egg allergy, these meatballs are fantastic. The tofu binds nicely to the meat and the flavor and texture is superb. I pan fried my meatballs in a cast iron pan. Moist and delicious, the meatballs were perfect with the homemade tomato sauce and pasta. Toddler tested, mommy approved! Enjoy my friends. related searches : Homemade
