Hominy Casserole
I made my menu last week, and this week when people's asked I've told them what was on it. I had three people say "Hominy Casserole? What's that?" My uneducated response was, it's in the corn family. That's what I was told the first time I had hominy, many years back. Right or wrong, that's what I thought it was. After some of these people researched and I was mostly right.
Anyway, I got this recipe from Babycenter's Cooking For Your Family forum. It had good reviews, it looked (god, I feel like this is starting to sound like a recording) easy enough. Little did I know, this would be soooooooooooooooo good. I mean, the three of us who had it tonight (Serena included) enjoyed it. I am actually looking forward to leftovers. And (start the recording again) this was super easy and perfect for a week night. Hominy Casserole mrsrader86 1 lb ground beef 1/2 cup chopped onion 1/2 cup chopped green bell pepper 1 (15.5 oz) can white hominy, drained 1 (15.5 oz) can golden hominy, drained 1 (14.5 oz) can diced tomatoes 1 (4 oz) can chopped green chiles 1/2 teaspoon salt 1/2 teaspoon pepper 1 cup sharp cheddar cheese, grated Heat oven to 350 degrees. Butter 13x9 inch baking dish or casserole. Cook beef in large skillet over medium-high heat until browned; drained. Add onion and bell pepper; cook 3 minutes or until softened. Stir in all remaining ingredients except cheese. Spoon into baking dish. Bake 40 minutes. Remove from oven; sprinkle with cheese. Bake 10 minutes or until cheese is melted. related searches : Hominy
