Honey Florentines
These delicate Italian cookies taste almost like caramel. They go perfect along side a cup of hot tea or coffee. Make sure to space them apart when baking so they have room to grow and become as thin as they should be. I love baking with honey as it is one of the oldest things we have on earth. It dates back to 5500BC. In addition, you may never want to leave the kitchen; they cook extremely fast and burn even faster. Also, please everyone who has me on their blog roll leave a comment for me so that I can add you back to mine. When updating my blog it was deleted by accident and I want to get your links back up and running. Thanks so much! 2 tablespoons unsalted butter 2 tablespoons brown sugar 1-1/2 tablespoon honey 2 tablespoons all-purpose flour Pinch sea salt 1. Pre-heat oven to 375 F. Line 2 cookie sheets with parchment paper or baking mats. 2. In a small saucepan over low-medium heat add butter, brown sugar and honey, stir until well blended. In a medium seized bowl add sugar mixture and flour; mix well with a spoon until blended. 3. Place 1/2 teaspoon of mixture on baking sheet, making sure each spoonful is 3 inches away from one another so they have room to bake. Bake 3-4 minutes, until edges are golden. Cool cookies on baking sheet on a wire rack. Yields: 15 cookies
