Honey Spice Cake
Again, my project team will be well served this week with the cakes that I have made. The first is a Honey Spice Cake, amazingly simple and quick to whip up and the addition of spices, especially cardamon is just wonderful. The recipe came from one of my favourite forums Taste and is part of the fortnightly Cooks Club Challenge. This fortnight it's all about spice. What I really like about this cake is that you don't need a mix master to do it, the addition of honey is just a nice touch and did I mention the spices?? I will rewrite the recipe from the forum and my thanks to Frizz for selecting it.... Honey Spice Cake 50gm butter 25gm sugar 125gm honey 175gm Self Raising flour 1 pinch cinnamon 1 pinch ginger 1 pinch nutmeg 1 pinch cardamom 1 egg 2 Tablespoons milk 25gm flaked almonds 2 Tablespoons honey extra Method Preheat oven to 180 degrees Celcius non fan forced Oil & line an 18cm spring form cake pan or do as I did and use a ring pan using Bake Easy to spray onto the tin. Melt honey, sugar & butter over low heat until butter is JUST melted. Sift flour & spice Beat egg together with milk. Make a well in the flour & pour in butter mixture. Stir with wooden spoon until mixed, then add egg mix, beat until well combined using a wire whisk. Pour into prepared pan, sprinkle with almonds & bake for 25-30 minutes. In the ring tin took only 25 minutes and I would probably check it at 20 minutes. Drizzle cake with extra honey while still hot from the oven. Looks great, smell great and my team will tell me tomorrow if it tastes great - but I have no doubt that it will! related searches : Honey
