Hot Tuna Salad Stuffed Tomatoes

My husband loves tuna salad. Mainly because it’s good and he can claim that he has eaten fish. Okay.

He makes sandwiches with lettuce and tomatoes on visibly charcoaled toast; chaque un a son gout. I’m posting this for him because he said he made some tuna salad that didn’t taste like mine. “Oh maybe, just whistle.”

1) Buy good tuna. Water-packed, solid albacore is good and they have some at Costco. 2) Drain the tuna well before using. Watery tuna salad is a bad thing. 3) Hard boiled eggs and chopped onion must be included. Some people also add chopped sweet pickles but that’s optional. 4) Along with the mayonnaise, a little yellow American mustard is a requirement. This adds color and piquancy. After you have included the above, you are now free to improvise with other ingredients.

Tuna Salad Stuffed Tomatoes

2 cans of tuna

1 small onion, chopped

2 hard-boiled eggs, chopped

1/4-1/2 cup of mayonaisse

A dollop of mustard

Salt and pepper to taste

4 medium sized tomatoes

Grated cheese

Drain the tuna in a strainer, then coarsely separate with a fork. Add remaining ingredients and blend well.

Cut the tops off the tomatoes and remove pulp to create a shell. Fill with tuna salad and sprinkle with cheese. Put on a plate and microwave for 1 1/2 minutes until cheese is melted.

Alternatively, charcoal some bread, layer on tuna salad with sliced tomato and lettuce.
