How to make Mosa (Step by Step Picture Tutorial)

Mosa is a Nigerian snack that is made from very ripe plantains to which eggs and spices are added. It's very similar to ojojo and akara (made from blended beans) and like the last two, it is deep fried, so this would be an occasional snack due to all that oil unless of course you don't mind.

It's quite tasty and pretty easy to make and the plantain I used for this was supposed to be for a boiled plantain recipe, but it ripened quite quickly, so I had to come up with a plan B and mosa it was!

This is a basic recipe for Mosa and you'll need the following:

Makes 10 servings

1 very ripe plantain
1 large egg
2 tsps all purpose flour
Salt
Ground red pepper
1.5 cups Canola oil

Get your super ripe plantain
Wash, peel and cut in half
Mash with a fork (the plantain will be quite soft, so a fork will do)
Break egg and add to mashed plantain, along with a pinch or two of salt and pepper
Mix together thoroughly till well mixed
Pre-heat oil in fry pan over medium heat
Add 2 heaping teaspoons flour to the mixture, mix thoroughly again
Turn heat up to medium-high
Using a tablespoon, scoop mixture into fry pan
Fry underside for about 2-3 minutes till dark golden brown
Flip each piece over with a fork once the underside is brown like in the above pic
Let other side cook 2-3 minutes till golden brown
Layer a plate with paper towels (to absorb excess oil) and remove the mosa
Using another paper towel, lightly press over the top of the mosa to absorb more oil
Flip onto a plate and serve
Voila!

The flour serves to thicken the mixture because once you add the egg, you'll notice it becomes a much lighter mixture and for it to hold shape a tad better, the flour is used. One very ripe plantain will yield 10 mosa, so if you want double that, just double the ingredients.

Once you add the mixture to the hot oil, it'll initially sink to the bottom, but rise back up in a matter of seconds, so don't think there's anything wrong with your recipe measurements!

It's an incredibly greasy snack even though it's very tasty, so have napkins/paper towels on hand for your guests to avoid grease stains on your furniture!
