Guess who is still my house guest?

That's right folks, Howard!

He is getting cuter and cuter, I must say. And he is much smarter.  I am really proud of all of his efforts to follow the house rules.  He has been in getting a certain "de-masculating" surgery done over the last few days, but he will return this evening.  He now knows how to "sit" and "stay" and really knows the meaning of "no."  He still thinks biting is a form of affection, so I am really working on that.  And he is now officially available for adoption, so check him out here:

He goes by the name of "Hogan" on the paws website, so search for him under that.

Howard and Lizzie have both really enjoyed the arctic tundra that has taken over Dallas as of late. Unfortunately, I do not share their same enthusiasm for snow and wind chills in the negatives.  I was able to snap a few fun pictures of them during their adventures outside and after during a nap. I have a sneaky suspicion that Howard has a slight crush on Lizzie. Evidence below....

Naptime post snow ball fight? ?  And with all these freezing temps, soup has been my number one meal of choice over the last week.  Here is one of my favorites: Spinach Tortellini Soup

 
Spinach Tortellini Soup

1 onion, chopped
3 cloves garlic, minced
1 tbsp olive oil
1 can green beans
1 can corn
1 cup frozen peas
1 can diced tomatos
1 can tomato sauce
3 cans veggie or chicken stock
6 julienned basil leaves
1 package frozen 4 cheese tortellini
1 bag spinach ( you will need almost the whole bag)
Salt and Pepper to taste
Oregano to taste
Thyme to taste

In a large dutch oven, saute the onion and garlic in olive oil.  Once softened, add in the tomatos, tomato sauce, chicken stock, beans, corn, peas, and tortellini.  Cook until the tortellini is cooked through.  Add in as much spinach as you would like. I usually use about 3/4ths of the bag.  Cook for another minutes until spinach is melted.  Serve hot with cheese sprinkled on top.

Yummy and healthy!
