Hubby?s Birthday
Wow, do I feel like life is in over drive right now. We have so much going on with family stuff, baby stuff, and work stuff, that I have not been able to blog in forever. That said I do have a bunch of posts to write and will be putting them up over the next few Last weekend was Hubby?s birthday so we had the family in to celebrate as usual, and had dinner at out favorite place Iron Hill. Here is the cake I made hubby. The decorations on the top came from frosting in a can! I can?t seem to find it online, but it is ready to decorate icing that you just spray on. Works great and saves a lot of time on the decorating end. As for the buttercream, I have never made it but it was so easy, 1 stick butter, 8 oz by weight powdered sugar, 1 tsp vanilla, and 1.5 ounces of melted chocolate (I actually doubled the chocolate by accident but that is ok!) Blend until smooth. The cake is just a Betty Crocker Super Moist cake but instead of the oil and 3 eggs, I use 3/4 of a cup of applesauce, 1 egg, and the water. Then for this cake I added 1 cup of chocolate chips for Hubby. I would say to bake the cake a little longer then your box mix calls for, this cake was great, but a little more moist then I would like. (It started to fall apart when we cut it, but the taste is great and the texture is right on.) So a little late but, Happy Birthday to the best Hubby around!
