Hump Day Recipe ? Almond Pesto Cheeze

Hey guys,


I was about to write “I can’t believe it’s Wednesday already” but had to stop and think if it was, indeed, Wednesday!  Yup.  Clearly I’m in my own little world today.  Tom even shaved off his beard this morning and I didn’t notice.  I vaguely recall looking at his face and thinking “something’s different”, and then put it down to him having caught a bit of a sun.  But lo and behold, his face was naked!  Before you gasp in shock at my poor observation skills and think I’m a rubbish wife, Tom’s beard has a shelf-life of 2-3 weeks before it is removed and then cultivated again  Thus, it is not like years of growth have suddenly been removed from his face.  Anyway, I digress.


It is Wednesday!  And I am feeling much better!  A MASSIVE thank you, once again, for your kindness and well wishes.  I am feeling well, and full of life again.  It’s been a long 2 weeks so I’m relieved to be in my happy place again.  I think lots of these bad boys helped,



That’s right, I have finally jumped onto the green monster band-wagon.  What can I say, I’ve always been slow to cotton on to things.  Case in point: remember Tamagotchis?  I think I finally had one a year after they had gone out of fashion.  I kid you not.


Aside from green smoothies and being stuck in a time warp Riverford, a local farm, blessed us with this bounty this morning:



Organic AND locally-produced carrots, sugar-snap peas, apples, pears, green grapes, tomatoes, red batavia lettuce, spinach, new potatoes, courgettes and yellow onions.  Wow, heaven.  I don’t think I can ever tire of fruit and vegetables.  And, you know what goes well with your raw vegetable crudites?…

It’s time for the super-easy recipe to dunk your veg in until your heart is content.


Almond-Pesto Cheeze


Juice of 1/2 lemon

1/2 cup almonds, soaked overnight, rinsed and drained

1/2 tsp tumeric

2 cloves of garlic, minced (if you’re not a big fan of garlic I would use 1 clove or even 1/2)

1/4 extra-virgin olive oil

1/4 cup of water, as needed

1/2 cup fresh basil, loosely packed

1/4 tsp salt


Firstly process the nuts in your food processor until finely ground.  Then add the rest of the ingredients, apart from the water.  Process until combined; you may need to scrape down the sides of the processor a number of times.  Then, with the processor running, slowly add the water until it has reached your desired consistency.  Mine was on the chunky side.


Nonetheless, it won’t be long until this happens,
