Hush Puppies with Orange Dipping Sauce
This is the 3rd dish that we had for dinner last night. This went along with the fried fish (which has already been posted), greens, and mac and cheese. The orange dipping sauce is a recipe that I found on the Food Network site. It was so sweet and tangy it went really well with the hush puppies. These are so simply to make and they go really well with the fish. Here's what you need: Ingredients1 cup yellow cornmeal 3/4 cup self-rising flour 1 teaspoon salt 1/2 teaspoon sugar1/2 teaspoon cayenne 1/2 small sweet onion, finely chopped - I left out - Craig is not a fan of onions1/2 jalapeno, finely chopped - I left this out - Craig not a fan of heat in his food!4 green onions, sliced thin - again, no onions on ours!1 large egg, beaten 1/4 cup grated Cheddar 1 cup buttermilkOrange dipping sauce, recipe followsDirections Preheat deep fryer to 375 degrees F. Mix all the ingredients together into a large mixing bowl to form a thick batter. Dip 2 tablespoon spoons into water. Using the spoons scoop up some of the batter and drop into the hot oil. Work in batches. Fry for 3 to 4 minutes or until golden and brown. Remove and drain on a paper towel lined sheet tray. Serve with dipping sauce. Gina's Orange Dipping Sauce:1/4 cup Dijon mustard1/4 cup honey1/4 cup orange marmalade Mix the above ingredients together. This was like eating a little dessert almost with the rest of the meal. The sauce added the sweetness to hush puppies. Very easy to make and again, goes well with the fish. Enjoy the rest of your week. Patricia
