I CAN'T COOK!!!

Ever heard that line? I just cringe when I hear people say "I can't cook". The other day one of my co - workers said that to me. I felt so sorry for her. I can't cook, I can't cook...c'mon!

Cooking is about trial & error. Sometimes it's good, sometimes it's not. I remember buying this expensive steak once & marinating it with red wine. Jesus, what a mistake that was! One bite of that nasty steak & in the trash it went. I don't think anyone would have ate that!

For now I consider myself a cook of comfort foods like bacon & eggs, pancakes, french toast for breakfast. Perhaps a grilled cheese or chili, hamburgers or a BLT for lunch. Of course for dinner it could be Italian sausage with red peppers & onions, or steak & potatoes, or maybe rigatoni with meatballs, or maybe fettuccine.

I can cook all of these. It's not rocket science, just trial & error.

Breakfast is one of my favorites. Probably because you can have breakfast in the morning or you can have Breakfast for dinner! Do you feel me?

Here's a simple breakfast recipe:

Ingredients include:

Bacon, potatoes, egg beaters, bread for toast, butter, blackberry jam.

Fry a few slices of bacon. Fry it until it stops sizzling. Chop up a few potatoes & put them in the bacon grease. Fry the potatoes until they are a little brown & you can stick a fork in them.

Drain your bacon & potatoes by putting them in a plate with a paper towel to trap the grease.

Pour some "egg beaters" into the frying pan, add a slice of American cheese & some bacon bits. Put two slices of bread into your toaster. When the toast pops up spread some butter on the toast along with some blackberry jam & wallah!!!

Breakfast is served!
