I really need Spring to arrive fast.......as fast as last night's dinner was
I caught another cold. I am someone who rarely ever gets colds or the flu. I had one about a month ago, started the same way.Nose annoyingly dripping down the back of your throat, causing a tickling sensation and then you cough and your diaphragm hurts? That is today. I was up all last night with a dry cough. Between my teeth and this cold, The Nudge bugging me to make a ton of phone calls and appointments for him, I really just want to take a NyQuil and crawl up under the covers for the rest of the day. We are supposed to go buy a washing machine tonight but I don't think I am going to make it. I know he will try to bribe me by offering to take me out for dinner (the man just won't buy anything on his own) and I think we should do this tomorrow night when we are out getting hair cuts. Dinner then??? I bought a Spicy Turkey Kielbasa last week (big enough for 3 dinners) and I have a package of pirogi in the freezer, a head of broccoli and an onion. Can you guess where I am going with this? Roasted onions, broccoli, kielbasa and pirogi, of course. No recipe needed......everything but the cooking of the pirogi is done in a baking dish. I would say that this is the Polish equivalent of an Italian Roasted Sausage, Peppers and Potato dish. I love dumplings of any kind and no matter which ethnic slant you pair them with, it is all a GOOD THING. YUM!!! This was really good. The Nudge went back for 2nd's and 3rd's, he liked it that much. I have to say I liked the turkey kielbasa better than the regular one. I am sorry I didn't add more of it to this dish. You should, they will gobble it up (get it? gobble, gobble, turkey sausage?.....OK I'm sorry). Slice the kielbasa into 1/2" coins. Cut the broccoli into trees and add to the boiling pierogi during the last minute. Chop the onion into 1" slices and nuke for 1 minute to separate the slices. Boil the pirogi in salted water (1 tablespoon per gallon, thank you) a few minutes from done (about 5 minutes if frozen, 2 minutes if fresh). In a large bowl, throw everything in. Add enough olive oil and bacon fat (optional) to coat everything. Salt & pepper. Three to four whole garlic cloves, peeled and slightly mashed on the side of your knife. If you have a red pepper or carrot, dice and throw that in. ![]() Pour contents of bowl into a large sheet pan or baking dish. Pour some water or stock over them, cover with foil and bake, in a hot oven (say around 375-400 degrees) for 10 minutes. Remove the foil and continue to bake until the edges get browned, stirring every 10 minutes. Should take about 30 minutes.![]() A little lite sour cream or creme fraiche and a nice bowl of cold applesauce and good hearty mustard................ Dinner is served!! related searches : Really
