I'm confused...

Good evening guys :) How has your Thursday been? I've been playing it a little low key today. I've been feeling kinda wonky all day and didn't sleep well last night. I woke up with what I thought was a charley horse at 2:30am. I got out of bed to straighten out my leg and to try and easy the cramp. It stopped so I got back into bed and as soon as I put the covers back on BOTH of my legs, feet, ankles cramped up so bad I was in tears! Holy crap PAIN!!! It finally eased off after several minutes. Hubby tried to massage my legs but I had trouble sleeping after that. I was so scared to move at all!

I received a call from the hospital this morning. My MRI that I've been waiting for is next Tues. morning! I thought I wasn't getting in until Aug, so that was a surprise! I'm heading to my doctors tomorrow AM to get some sedatives to keep me calm. I've never had an MRI done but I'm claustrophobic and not sure how I will react. I'm happy to be finally getting it done, but I'm also scared that something could be seriously wrong. I feel like I've been walking on egg shells for so long.

So I called the pharmacist today to ask about how I've been taking my med's these past years, and what I eat for breakfast as I was concerned that by having my smoothie with calcium or any cheese/yogurt etc was hindering my med's. She said that if I've been doing the same thing this entire time it would not have caused the change in my thyroid levels. She said it was okay to continue on as usual. Phew! I was happy to hear that! I was thinking breakfast was going to become difficult for me.

I told my doctor that I was going GF to still see if there was a sensitivity and she thought it was a good idea but that I only needed to do it for one week. Hmm...? Everything I've read says longer so I'm now not sure what to think. For the most part the last few days haven't been too hard. I notice no difference in eating GF sauces, crackers, the usual. I will admit though that I find GF bread to be extremely expensive and it tastes horrible! We also bought some GF cereal bars and cookies for hubby's work and I thought they were gross. They taste stale and everything has a gritty texture that just turns me off!

I think I will follow my Dr's advice for now and do the first week and see how I feel. Honestly finding out that my thyroid was so low makes me question if I would know if the gluten was affecting me or not, or if I start feeling better as my levels come up? Ugh...I'm just confused. Can you tell?! LOL! I do find that eating everything with little fiber (I used to buy high fiber everything) that I don't stay full as long :( What to do, what to do...

Okay, so onto today's chow:




















B-fast: A baked egg (recipe to come!) and a slice of GF brown rice toast w/1 tsp butter and a decaf coffee.




















Shortly after breakfast I had a can of this. After my episode with my legs I figured the extra potassium was probably a good thing.
















Lunch was a big salad w/lettuce, onions, carrots, tomatoes, cucumber,30g feta, natural ranch dressing, 1 Tbsp pumpkin seeds, and 5oz baked salmon.













Mid afternoon I had 2 Tbsp hummus w/Baked Cucumber Dill Lentil chips. They are really tasty!
















Dinner was simple and wonderful! Steamed broccoli with a small baked sweet potato, 30g crumbled feta and .5c Bush's vegetarian beans. This is such a comforting meal to me :)
















Dessert was .5c honey Greek yogurt, 1 Tbsp GF oatmeal, 1 Tbsp dark chocolate puffed quinoa and 3 dark chocolate pecans.

Well time to catch some Zzz's...I have a full day of cooking ahead of me tomorrow.
