Indian Chicken Briyani on 'Recipe for a purpose'
![]() Hi Buddies, I'm a member of 'Blogger Aid' and here i'am to participate and sponsor a recipe for the Blogger Aid Cookbook. Food is our medium and taking a role in alleviating world famine is our mission. ![]() As per the rules i'm not listing the ingredients list, will be giving it after the recipe gets published after March 31st. Recipe In a heavy bottomed vessel/ pressure cooker, pour 3 tsp ghee and the vegetable oil and put heat on medium flame. Add the Crushed cinnamon, cloves and fennel seeds and stir for 2 mins till they turn light brown. Now add the Chopped Onions, bay leaves, ginger&garlic paste, mint, curry leaves and green chilly and sauté for 3mins till the onions turn transparent.(Be careful not to burn the ginger-garlic paste, if so keep burner in less flame) After done, add the chopped tomatoes, red chilly powder, garam masala powder, turmeric powder and salt. Sauté all together well in medium heat till the tomatoes cook and get mashed in the spatula. Now, add the chicken with bones and sauté well for 3mins in medium heat till they turn white and soft. Add the coconut milk, Water and lemon juice and put flame to high, cover & wait for boil. After 8-10mins, uncover and when the water starts boiling put the soaked rice slowly. Stir well from the bottom and cover cook for another 15 mins or leave for 3 whistles in case of pressure cooker. ![]() After 15mins, uncover, you will see rice half-done floating on top of the vessel. Now put in medium heat and give a constant stir from the bottom to prevent sticking and burning. Cover again and leave in medium heat for another 5-8mins, you will get an excellent spicy aroma floating through your home at this time. Uncover and the rice would be done by this time. If not, cover and cook another 5mins. Now add the remaining ghee and give a stir from bottom and put off the flame. ![]() Garnish: Finally garnish with Sliced Onions, cilantro and roasted cashews on top of the chicken briyani.
