Inspiration
Hello Everyone! I hope you?re ok and your 1st day back at work was ok. Mine was actually better than what I was expecting. I went to bed last night at about 10:30 and fell asleep quite fast but then, I woke up at about 2 and after that, I saw all the hours on my alarm clock :s No need to say that I was really tired at work. As we were really tired, Boyfriend and I decided not to go to the gym and have an early dinner and then watch a movie and eat popcorn made from Boyfriend?s popcorn machine ;) Tonight?s movie is 101 Reykjavík. Has anyone seen it? It seems a bit weird but I like Victoria Abril. So as soon as we got home, I started preparing dinner. We had decided on salmon so we took it out of the freezer this morning. Then I only had to think about how to cook it and what to eat with it! I decided on making Teriyaki Salmon with Riz Pilaf! It was YummY I just marinated the salmon in some Teriyaki sauce for about 30 mins. While the salmon is resting, do the Riz Pilaf (for 2 people): A little butter (Yeah, I cook with butter) in a pan. Then add 1/2 chopped onion (very finely chopped). Once the onion is clear, add 150g rinsed rice. Mix a little and then add 30cl chicken stock. Cover and cook for about 15 mins without touching it. Once it?s cooked, remove the lid and mix a little with a fork! About 10 mins before the rice is ready, go back to the salmon. Simply cook it in a pan with again a little bit of butter and add the remaining Teriyaki sauce.
After dinner, we prepared lunch for tomorrow. Mine is simple: the rice leftover + veggies: carrot, tomatoes and cucumber + mini babybel light + yogurt + 2 little oranges.
Inspiration, why this title? Well, just because I've been reading your blogs and I find your new years resolutions really inspiring. They really motivate me to get back on track (food wise and fitness wise). I really want 2011 to be the year I'm happy and proud of my body so I?m really going to commit to it. This will be achieved by my efforts of course but also by keeping blogging (writing mine and reading yours). Thanks to you all for it ;-) related searches : Inspiration
