Inspired eats

Tahini on oats has got to be one of the best concoctions, EVER.


I can’t take credit for all of my eats of course; below are a few plates of food from the previous couple days in which have been inspired by a couple of my favorite bloggers.  Bloggies? Bleeps?



Tahini+maple syrup+Nature’s Path granola on top a simple bowl of whipped banana oats?!  So delicious!

Lately I’ve been eating my salads dry- which is actually so good!  In this massive bowl is spring greens, fresh mint, unsweetened coconut, a couple raspberries, carrots, celery, red pepper, jicama, chicken breast and avocado.  Mmm.



Lunch plate I downed before work on Saturday: 2 boiled eggs, okra fries, carrots with hummus.



Dinner Saturday: grilled white sea bass with roasted cherry tomatoes, butternut squash, yellow carrots, broccoli.



Breakfast Sunday: 2 poached eggs, and roasted kabocha!



This was a spur of the moment lunch, and it ended up being one of the best lunches ever. Sliced tomatoes with hot trout right off the grill with green jalepeno Tabasco, and raw kale salad.  My raw kale salad is so simple, but sooo good.



A few Kale leaves sliced, washed, dried
1 lemon juiced, whisked with 1-2 T olive oil, fresh ground pepper
2-4 T grated Pecorino Romano.

The cheese acts as the salt in this recipe, and let me tell you- the combo is out of this world. This recipe served two.



Dinner Sunday: Grass-fed Meatloaf with greens+tomato+avocado.  I followed a usual meatloaf recipe I keep off the top of my head, but it was similar to a previous recipe post.



Snack plate!  I see a Honeycrisp, Almond Butter, Vanilla protein drink, raw coconut on this plate.  Delish!



Egg white breakfast before Thanksgiving!  With toast with mashed banana+PB+ pumpkin seeds in celebration of Turkey Day!



Friday breakfast: Savory Oats, inspired by Kate’s egg+avocado+sweet potato combo the other day.  Poached egg+avocado on top Whipped Banana Oats



1/2 cup oats, 1 cup water, 1/2 banana sliced, vanilla
1 poached egg, 1/8 avocado


Honeycrisp + Venti Iced Americano.



Another giant Salad!  With sliced tomatoes on the side.


Its finally getting colder here in Tucson- I was all set to run an 8 mile race this Saturday. But I have to work, unfortunately.  :(   My mom and friend are still going to run it, and I think I’m still going to try and do 8 miles (which will be a first) just around my neighborhood and surroundings.  We’ll see how it goes!


OMG.  Glee last week was awesome.  I cannot get over how good it was.  I’ve also gotten a lot of recommendations to start watching Modern Family.  Anybody watch it?! Just curious.  Biggest Loser Final Four tonight!  I’m definitely looking forward to it.  I’m rooting for Amanda- she’s my age and such a hard worker, so I’m hoping she’ll do well.  And, thats it.  I got nothing else to say.  Surprisingly.
