Italian Sausage and Pepper Pasta

This recipe is from WW weekly 2/14-20, and it's another good one.



Of course, you know this by now, I made a few changes to the original recipe. 

Italian Sausage and Pepper Pasta (the Diva Weigh)

1/2 lb raw Italian chicken sausage, casings removed
2 tsp extra-virgin olive oil
1 medium yellow pepper, cut into 2 inch long thin strips
1 medium onion, thinly sliced
1 medium zucchini, thinly sliced
1 cup mushrooms, sliced
1/2 cup red wine
1 1/2 tbls minced garlic
28 ounce can crushed fire roasted tomatoes
1/2 tsp crushed red pepper flakes
1/4 tsp table salt
8 oz uncooked whole wheat fusilli
1/3 cup fresh basil, chopped

Bring a pot of lightly salted water to a boil.  Meanwhile make sauce.  In a large non-stick skillet over medium heat, cook sausage, stirring and breaking up meat until cooked through, about 3-5 minutes.  Remove to a plate.
Heat oil in same skillet.  Add peppers and onion, cook, stirring frequently, until vegetables are crisp-tender, about 2 minutes.
Add zucchini and mushrooms, cook, stirring frequently, until zucchini and mushrooms are crisp-tender, about 2 minutes.
Add wine and garlic, cook until most of liquid evaporates, about 1 minute.  Add tomatoes, red pepper flakes, salt and browned sausage, bring to a boil.  Reduce heat to medium low, cover, and simmer until vegetables are tender and sauce is heated through, about 10 minutes.
Meanwhile, add pasta to boiling water and cook according to package instructions.  Drain pasta, return to pot.  Add sauce and basil, toss to mis and coat.

6 servings, about 1 1/2 cups per serving

4 points per serving






I used Fiber Gourmet Light Rotini in this. 

It is possible to divide this dish into 8 servings, about 1 cup each, for 2 points per serving!

This dish is simple to make and very good.  The fire roasted tomatoes give it a nice smoky taste. 

Use more or less red pepper flakes to suit your taste.



My DH had about 3 or 4 servings of this!  He loved it and didn't even know it was a WW recipe!  He thought he was eating Italian pork sausage! and was very surprised when I told him it was Italian chicken sausage and a low-fat and calorie recipe!




I think this is what we're having for dinner tonight!
