I've tapped the magic muffin tree

I'm back from the mountains and I'll be updating you all with a myriad of photos later in the week when I get a chance to upload the pictures. Hope you all had a fabulous Memorial Day!

Have you ever surfed YouTube randomly until you happened upon a video that just about made you pee your pants with laughter? It's an excellent cure for a bad mood. I highly recommend YouTube therapy for anyone suffering from the grumps! Well, it was after one of these incredibly therapeutic episodes that I came across the delightful antics of muffin girl.



I do believe this video has hypnotic qualities because after watching it I could NOT get the idea of muffins out of my mind. But what kind of muffins to make? There were too many options and my tired little, curly head was much to muddled to make any such important decisions. And that was when I happened upon a brilliant thought, my friends.



Who says your entire batch of muffins has to be all the same flavor? I decided to tap into the free spirit of muffin girl and follow my inner instincts. This little curly girly made up on batch of basic base, divided it into muffin tins, and then added mix-ins to each cup. Eight, entirely different muffins in one sweep! And with only ONE mess to clean up!



Magic Mix-A-Muffin Base

(serves 8)

1 cup wheat flour
3/4 cups oats
1 ripe, mashed banana
2tsp baking powder
1/2 tsp salt
1/4 cup egg whites (vegans can use an egg replacer like flax or Ener-G)
1 cup non-dairy milk (hemp, almond, or soy)
6 tsps stevia or agave



My flavor combos were:

Dried apples and cinnamon
Carrot, coconut, and ginger
Cherry and unsweetened coco powder
Cheddar and Green Onion
Blueberry and brown sugar
Pineapple and coconut with cashew butter
PB and jelly (hide the pb in the center for the perfect amount of gooiness!)
Pumpkin puree and pie spice

Bake for 15-20 minutes at 350 degrees. Enjoy the variety. But don't be greedy! You saw what happened to the little girl...
