Jalan sarma

Da, da, da ... Jalan sarma... tako ju je zvala moja pokojna majka.
I akcenat je druga?iji, ne bih ja to znala akcentirati ali nekako kao da ka?ete ono bosanski "bolan":)))))
Ali, ovo jalan nije u smislu one ?uvene osobnosti (da ne ka?em ?ije) u smislu zavisti nego zna?i ne?to posno, ?to ?e re?i bez mesa, odnosno jalovo?!
Ovo je jedno staro hercegova?ko jelo, obi?no se slu?ilo hladno kao mezetluk (meze, predjelo).
Pravi se od mladih listova vinove loze, naravno neprskane. Jo? sam si pro?le godine stavila u zadatak ovo pripremiti u prolje?e kada loza po?inje listati ali iz ve? znanih razloga nisam stigla.

Zato, evo je sada, nikada nije kasno ili bolje ikad nego nikad.

I jo? moram re?i svi?a se i mojim de?kima... sve sam vam time rekla:)))

A, pravi se ovako:

Za nekih 20 - tak sarmica potrebno je:
20 - tak mladih listova vinove loze3-4 struka mladog luka ( sa zelenim perima)
20 - tak listova svje?e mente (nane)?alica od 2 dcl ri?e (ovdje sam stavila onu originario)
sol, papar, eventualno vegetamalo uljaListove loze oprati, te blan?irati u vreloj vodi, ocijditi ihNa malo ulja izdinstati sitno sjeckani mladi luk (i zeleni dio), malo ga posolitiNa omek?ali luk dodati ri?u (suhu, nemojte je prati), dodati isjeckanu mentu, posoliti i popapriti i skloniti da se malo prohladi


4. Na svaki list staviti otprilike oko 2 ?ajne ?lice ri?e, pa umotati kao pismo i slagati u posudu u koju ?e se kuhati




5. Pripremljene sarmice opteretiti prikladnim tanjurom, zaliti vrelom vodom (malo iznad tanjura) te stavit kuhati. Kuhati na laganoj vatri 20 - 25 minuta (ri?a ?e upiti vodu)

6. Slu?iti s kiselim vrhnjom ili bez njega kao hladno meze ili sa umakom od raj?ice, ma po ?elji i volji.


Jo? dok sam bila u Iraku (prije skoro 30 godina) vidjela sam konzervirane listove vinove loze. ?esto sam vi?ala sarmice u listovima vinove loze ali one klasi?ne s mesom.
Ove su vjerujte posebne, radi mente, mladog luka, a listovi vinove loze imaju neku prekrasnu specifi?nu kiselinu i pravi su u?itak na nepcu ... i dalje.
