So there’s this rice and beans chorizo dish that I make and it’s delicious.   I don’t usually post the variations of a dish that I come up with later on, but this one was so good and changed the dish so completely that I decided I should add it.  Also a good friend suggested that I update recipes with variations… I love when my friends come up with great ideas.


Use the same recipe listed above, but use a really big pot, like a pasta pot and just before serving, add two large bunches of spinach, turn off the heat and toss lightly until the spinach sweats down.  It was like a completely different meal and oh so satisfying.
