JELLIED CRANBERRY SAUCE
There will be just the two of us for Thanksgiving dinner this year, so I let Hubby set the menu. As suspected, he has chosen old time favorites including jellied cranberry sauce from a can (picture Coleen with horrified look on her face!!!). Yep, Hubby can not stand cranberry sauce that has "chunks" (as he calls them) haha.
Hoping to change his mind about the "can", I baked a chicken and served it with this very simple jellied cranberry sauce; Hubby eagerly gave it two thumbs up!! So...if you have a jellied cranberry sauce purist in YOUR home this holiday, give this quick recipe a try. It really is delicious. 12 ounces of fresh cranberries, washed and sorted.1 cup white sugar 1 cup pineapple juice Gently boil the above ingredients for 10-12 minutes (I boiled for 12 minutes) or until berries have all popped and juice has thickened (stirring constantly) then force through a fine strainer.
